Bowties with Asiago Cheese & Spinach
Prep Time 5 minutes
Cook Time 6-8 minutes
Serves 4
Ingredients
3 cups boiling
water
4 oz. sun-dried tomatoes (packed without
oil)
2 tbsp. extra virgin olive oil
1/8 tsp. salt
1/8 tsp. freshly ground pepper
1 clove garlic, minced
12 oz. bowties, cooked and drained
10 oz. bag fresh spinach, torn
1 1/2 cups Asiago cheese, grated
1/2 cup Parmesan cheese, freshly grated
Preparation
Combine boiling water
and sun-dried tomatoes in a bowl; let stand
for 25 minutes. Drain and chop tomatoes.
Combine tomatoes, oil, salt, pepper, and
garlic in a large bowl. Add hot pasta and
spinach; toss gently. Sprinkle with cheeses,
toss gently. Serve. Serves 4 to 6.
* I would suggest 1/2 cup of balsamic vinegar
or red wine vinegar to this recipe
