2 eggs,
lightly beaten
1 1/2 cup milk
1/4 cup packed brown sugar
2 cups all purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
oil for deep-fat frying
confectionary sugar
Preparation
In an electric skillet or
cast iron pan, heat the oil to 375 degrees.
In a large bowl, combine the eggs, milk
and brown sugar.
In another bowl, sift together the flour,
baking powder and salt.
Fold into the egg mixture until smooth.
Cover the bottom of a funnel spout with
your finger.
Ladle 1/2 cup batter into the funnel.
Holding the funnel several inches above
the skillet, release your finger and move
the funnel in a spiral motion until all
the batter is released.
Fry for 2 minutes on each side or until
golden brown.
Drain on paper towels.
Repeat with the remaining batter.
Dust with confectionary sugar.
Serve warm.
